Ginger Carrot Soup

When it's really cold outside, you want warm socks and a plate of hot soup. This is good for body and soul and is also very healthy and delicious.

Try this ginger-carrot soup:

👉Ingredients: (for 2-3 persons)
300 g carrots
1 stick of leek and onion
1 apple
2 tbsp. oil
500 ml vegetable stock
250 ml evoACTIVE
100 ml cream
salt and pepper
fresh basil leaves
1 tablespoon walnut kernels or pine nuts

Wash and peel the carrots and cut them into large cubes. Peel the apple and also cut it into small cubes. Heat the oil in a pot and put
carrots, apple and leek and onion cubes in it for about 2 minutes over medium heat, until everything is translucent. Now deglaze with a little vegetable stock to loosen the base of the pot, this gives a delicious aroma. Add the rest of the broth and let it cook for another 10 minutes with the lid on. Then add 1 can of evoACTIVE (alternatively 1 tsp. of grated ginger and 100 ml of coconut water or coconut milk) and cover and simmer for another 5 minutes over low heat. Now finely puree everything with a hand blender, add 100 ml of cream and let it boil again briefly. Season with salt and pepper, depending on your taste.

Serve the soup on a deep plate, garnish with some walnut/pine nuts and finally add some basil leaves.

white hot wine

750ml white wine
500ml – 750ml evoACTIVE
2-3 limes
1 apple (optional)
2 cinnamon sticks
allspice / clove pepper in one piece - approx. 10 grains
Star anise - approx. 5-7 pieces

If you like it a little sweeter, you can add agave syrup.

Put the white wine with the cinnamon sticks and the spice seeds in a pot and heat slowly on medium heat. (the longer the more intense the taste). Halve the limes, squeeze them and add them to the white wine.
When the white wine is about to boil, lower the heat and season to taste. If necessary, let it stand longer so that the spices can develop further. Now add the evoACTIVE and heat for another 1-2 minutes. If you want it to be tangy, add the carbonated evoACTIVE as late as possible. If you don't like it that way, just let it stand longer.
Pour the white mulled wine through a sieve into cups and enjoy hot. Depending on taste (and for the eye), add a few apple pieces to the cup.
